This has become my new favorite snack in the summer! It is so refreshing and I love that I can use so many fresh veggies straight from the local farm or from my backyard. It has a little heat from the jalapeno, but you could always leave them out if you don’t want the spice. I have been eating it lately with tortilla chips – it would go great over grilled chicken!
2-3 ears of fresh corn, kernels removed (I used leftover cooked cobs, but you could swap out fresh corn for a 15 oz can of corn)
15 oz can black beans, drained and rinsed
1 cup chopped red onion
2 cups seeded and chopped tomatoes
1/3 cup seeded and diced jalapeno
1/4 cup chopped fresh cilantro
1/4 cup lime juice
1/2 tsp cumin
2 Tbsp olive oil
1/2 tsp salt
1/2 tsp fresh ground pepper
Combine all the ingredients in a large bowl and mix to combine. Dig in and enjoy!
