My husband and I both love rice pudding and when I happened to have all the ingredients to make a batch, I decided to try this new recipe. I loved that it’s made in a pressure cooker… not more watching a pot on the stove. It was so easy to make and was delicious. It’s a rich pudding, but isn’t that what comfort food is all about.
My husband likes raisins in his rice pudding, but you could easily swap out for dried cranberries or other dried fruit. This pudding will thicken up as it sits. Add a little milk or cream to thin it out if you prefer a thinner pudding.
1 cup Arborio rice
1 1/2 cups water
1/4 tsp salt
2 cups whole milk
1/2 cup sugar
1/2 tsp vanilla extract
3/4 cup raisins, optional
In a pressure cooker, combine the rice, water and salt; mix. Close the lid and select high pressure for a 3-minute cook time. Allow the pressure cooker to naturally release for 10 minutes and then release any additional pressure manually. Stir in 1 1/2 cups of milk and sugar.
In a small bowl, whisk together the eggs, 1/2 cup milk and vanilla. Pour the mixture through a fine mesh strainer into the pressure cooker pot. Select saute and allow to come to a boil. Continuously stir to avoid the rice sticking to the bottom of the pot. Turn off the pressure cooker and remove the inner pot to stop the cooking process. Stir in raisins if you’d like.
Serve warm or divide into serving dishes to chill.
