Living in the Northeast, I never tried pimento cheese before, but have seen many Southern friends share it as a staple at their summer parties. My family and I ate at Founding Farmers recently and tried it as an appetizer. It was so good and definitely something we’ll be making and eating more often.
It’s a fairly basic recipe from what I found online and decided to give a try. Simple and easy to make, it was a great snack to enjoy on butter crackers. I want to try it in a grilled cheese sandwich and recently saw it used as a topping for a patty melt. What’s your favorite way to eat pimento cheese?
4 oz cream cheese, softened at room temperature
1/2 cup mayonnaise
4-oz jar pimentos, drained
2 cups sharp cheddar cheese, shredded
1/4 tsp cayenne pepper
salt and fresh ground pepper to taste
Using a food processor, combine the mayonnaise, cream cheese, jar of pimento, cayenne, salt and pepper until smooth. Transfer to a medium bowl and combine with the shredded cheese. Mix until incorporated. Place in a serving dish and chill until ready to serve. Enjoy with crackers, vegetables or any other way you desire.
