I’m always on the hunt for new granola recipes and this recipe for Pumpkin Granola is going to be my new go-to fall granola recipe. It’s so good, the perfect amount of pumpkin and I love the addition of pumpkin seeds.

3 cups old fashioned rolled oats
1 cup chopped walnuts
1/4 cup raw pumpkin seeds
2 tsp pumpkin pie spice
1 tsp cinnamon
1/4 cup almond butter
1/2 cup maple syrup
1/3 cup pumpkin puree
3/4 tsp salt
Preheat your oven to 350 degrees and line a baking sheet with parchment paper. Set aside.
In a large bowl, combine the oats, walnuts, pumpkin seeds, pumpkin pie spice, cinnamon and salt. In a separate bowl, mix together the almond butter, maple syrup and pumpkin puree until smooth.
Pour the wet mixture over the oats and nuts. Stir to complete covered and then spread evenly on the prepared baking sheet.
Bake for 25 minutes, stirring halfway through the baking time. Remove from oven when the granola is golden brown in color. Allow to completely cool before breaking into chunks. Store in an airtight jar or bag and enjoy.
