Easy Apple Squares

This cake was delicious, and I can’t wait to make it again. I had a couple of apples that were on their way to not being as crisp for eating raw, but knew they would be perfect for baking.

This cake was super moist and so easy to make. The flavors of apple and cinnamon were perfect, and the addition of Greek yogurt made me feel it was ok to eat cake for breakfast.

3 apples, peeled and cored and then chopped into small cubes

1 tsp cinnamon

4 Tbsp brown sugar

1 1/4 cup flour

1 tsp baking powder

1/8 tsp salt

1 cup sugar

1/3 cup vegetable or canola oil

1/3 cup Greek yogurt

1 tsp vanilla extract

2 eggs, room temperature

Preheat your oven to 350 degrees. Grease a 9×9 square baking pan and set aside.

In a medium bowl, combine chopped apples, cinnamon, and brown sugar. Set aside. In another medium bowl, mix together the flour, baking powder and salt. In a separate bowl, whisk together the sugar, oil, yogurt and vanilla until smooth. Add in the eggs one at a time and mix together.

Add the dry ingredients into the wet mixture and mix until just combined. Pour half the batter into the prepared pan. Top with half the apples and then carefully spread the remaining batter over top. Add the rest of the apple mixture over the top.

Bake for about 45 to 60 minutes or until a toothpick inserted in the center comes out clean. Allow to cool slightly before cutting. If desired, sprinkle with powered sugar before serving.
