These blondies are so good and simple to make. I’ve been looking for basic blondie recipe and this one is it. I can’t wait to try other flavor combinations. They were chewy and dense and a hit with my family.

1/2 cup unsalted butter, softened
1/2 cup brown sugar, packed
1/3 cup sugar
1 egg, at room temperature
1 tsp vanilla extract
1 cup flour
1/4 tsp baking powder
1/2 tsp salt
1 cup dark chocolate morsels or chunks
1/2 cup dried cranberries, chopped
1/2 cup chopped pecans
1/4 cup sweetened shredded coconut
Preheat your oven to 350 degrees. Line a 8×8 baking pan with parchment paper and lightly spray with nonstick cooking spray. Set aside.
In a bowl of a stand mixer, cream together the butter and sugars until smooth and creamy. Add in the egg and vanilla. Mix together. Then add in the dry ingredients and mix until just combined.
Fold in the chocolate, cranberries, pecans and shredded coconut until evenly distributed. Transfer to the prepared baking pan and spread evenly. Bake for 35 to 40 minutes or until golden brown. Allow to cool in the pan for 15 minutes. Remove from the pan and allow to completely cool before slicing. Store in an airtight container.
