Honey Chicken

Sometimes the simplest recipes are the best. You know the ones that take all of five minutes to throw together and don’t required unique ingredients. I love this recipe since it uses everything that I always have on hand and can throw it into the slow cooker at lunch and it will be ready in time for dinner. It’s also great for those nights when we have something going on and need to get a dinner on the table quickly…which I’m sure will be happening more often with more activities as the kids get older!

2 chicken breasts (approximately 1 lb of chicken)
1/2 tsp salt
1/4 tsp black pepper
1/2 cup honey
1/4 cup low sodium soy sauce
1/8 cup chopped onion
1/8 cup ketchup
1 Tbsp vegetable oil
1 garlic clove, minced
1/4 tsp red pepper flakes

Season both sides of the chicken with salt and pepper and place into a slow cooker. In a small bowl, combine the honey, soy sauce, onion, ketchup, oil, garlic and red pepper flakes. Pour this mixture over the chicken. Cook on low for 3 hours.

After 3 hours remove, chicken and cut into bite-sized pieces. Return back to the slow cookerand toss in the sauce to coat. Serve with rice or noodles.
