Last weekend, we had a little taste of fall and it made me want to get into the kitchen and make something. Madeline has been asking for granola and I’ve been waiting to make this recipe once it got cooler. I’m so glad I didn’t have to wait any longer. It is so good and so simple and easy to make. We both have been eating it on top of plain Greek yogurt, but you could totally eat like cereal too! I love the warmth from the spices too…it reminds me so much of fall.
2 1/2 cups old-fashioned oats
1 cup pecans, chopped
1 tsp cinnamon
1/2 tsp cloves
1/2 tsp nutmeg
1/2 tsp salt
1/2 cup maple syrup
2 Tbsp coconut oil, melted
2/3 cup dried cranberries
Preheat oven to 275 degrees. Line a large baking sheet parchment paper or silicone mat. In a large bowl, combine the oats, pecans and spices. Mix to combine. In a small bowl, mix together the maple syrup and coconut oil. Pour over the dry ingredients and mix until it is completely coated.
Pour out onto the prepared baking sheet and spread evenly. Bake for 40 to 45 minutes. Remove from the oven and place the pan on a wire rack. Sprinkle the dried cranberries over the top and allow to cool for 20 minutes. Break up the granola into clusters and store in an air-tight container.
