Last weekend, I received a head of cabbage in our CSA share and cauliflower was on sale…it was the perfect timing to make this low carb unstuffed cabbage soup. I love stuffed cabbage, but it’s a pretty labor intensive dish…but this soup fills that craving for me. Plus it’s made in the slow cooker! Win, win!
This soup was even better the next days. The flavors really came together and tasted just like stuffed cabbage. Both of my kids enjoyed it too – especially since I told my son it was “cheeseburger soup.” He thought it was so funny and ate his entire bowl. Whatever works. 🙂
2 Tbsp olive oil
2 garlic cloves
1 medium onion, diced
2 lbs ground beef
1 tsp dried parsley
1/2 tsp dried oregano
1 tsp salt
1 tsp fresh ground pepper
16 oz marinara sauce
2 cups riced cauliflower
5 cups reduced sodium beef broth
8 cups sliced green cabbage
In a large saute pan, warm the olive oil over medium high heat. Saute the garlic and onions until softened. Add in the ground beef and spices. Cook until browned and no longer pick. Depending on the percentage of fat in your beef, you may need to drain any excess grease. Stir in the marinara sauce. Transfer the cooked beef to the slow cooker. Add in the riced cauliflower and stir to coat.
Mix in the beef broth and sliced cabbage. Cook on high for 3 hours or low for 6 hours. Stir occasionally through the cooking time to make sure all the cabbage is cooked through and soft.
