For #CookoutWeek, I’ll be taking you through an entire meal, course by course – perfect for your next bbq, picnic, cookout or just for dinner! I’m starting out with an appetizer – spicy seven layer dip. Ironically, I’ve never made a layered dip before, but this will be made over and over again. It’s super easy especially since I’m using store-bought hummus and guacamole. My husband and I loved it and the spice the hummus had. I served it with blue multi-grain tortilla chips, but you could serve it with a veggie tray and it would be delicious too!
10 oz container hummus (I used a sriracha hummus)
2 cups guacamole
2 cups chunky salsa
1 1/2 cups plain Greek yogurt
2 Tbsp taco seasoning
1 1/2 cups shredded Mexican cheese
1 cup diced roma tomatoes
1/2 cup sliced black olives
1/4 cup green onions, chopped
In a 8 inch glass pan, layer the hummus, guacamole and salsa. In a small bowl, mix the taco seasoning into the yogurt. Spread that layer over the salsa. Sprinkle the cheese on top of the yogurt and then top with the diced tomatoes, olives and green onions. Cover and refrigerate until ready to serve.
