I’ve been itching to make something with pumpkin and decided on a recipe for pumpkin bread. I didn’t want to make my usual recipe for bread, so off I went to Pinterest. The first recipe I came across was this recipe for One Bowl Pumpkin Bread – perfect!
The bread was so good too! My family inhaled it and are already asking me to make a second loaf. It was packed full of pumpkin flavor, moist and delicious warmed up with a smear of cream cheese.

1 cup sugar
1/2 cup brown sugar, packed
1 3/4 cup flour
1 tsp baking soda
3/4 tsp salt
2 tsp pumpkin pie spice
3/4 cup pureed pumpkin
2 eggs, beaten
1/2 cup canola oil
1/3 cup water
1 tsp vanilla
Preheat your oven to 350 degrees. Spray a 9×5″ loaf pan with nonstick cooking spray and set aside.
In a large bowl, combine the dry ingredients and mix well. Make a well in the center of the dry ingredients. Add in the canned pumpkin, oil, water and vanilla. Mix together with a spatula until just combined.
Pour the batter into the prepared pan and spread evenly. Bake for 60 minutes or until a toothpick inserted in the center comes out clean. Allow to cool completely in the pan. Remove and slice.
