With the start of 2024, I’ve been trying to incorporate more protein in my meals as I’m getting older. I was eating eggs recently and wanted something different for breakfast. I had a bag of quinoa that has been in my pantry and wanted to make something with it. My family dislikes it and always says it’s like bird seed. I love it and knew it would be good in this breakfast bake. I also had some apples that were not as crisp and needed to be used up.
This was really good and so filling. I added it to a scoop of vanilla Greek yogurt for even more protein. It’s definitely better warmed up and enjoyed that way.

1 cup quinoa
2 cups diced apples
1 Tbsp cinnamon
2 cups almond or oat milk
1/4 cup unsweetened applesauce
2 eggs, whisked
2 Tbsp maple syrup
1 tsp vanilla extract
Preheat your oven to 375 degrees. In a 3-quart baking dish, add in the milk, applesauce, eggs, maple syrup, vanilla and cinnamon. Add in the quinoa and apple chunks. Stir to evenly distribute the quinoa and apples.
Bake uncovered for 50 to 60 minutes or until the center is no longer loose and the quinoa is cooked. Allow to cool 15 minutes before enjoying. Top with a dollop of Greek yogurt and a sprinkle of cinnamon.
