Everything Bacon Apple Biscuits

My kids were complaining that we had “nothing” for breakfast and I decided to see if I could find a new recipe to make. This biscuit recipe was perfect as I had a couple pieces of leftover bacon and apples. The dough was easy to make and we all enjoyed the biscuits. They were perfect with scrambled eggs. I’ll definitely be making them again!

2 cups flour

1 Tbsp baking powder

1 tsp salt

1 tsp fresh cracked black pepper

1/4 cup unsalted butter, frozen

1/2 cup crumbled cooked bacon, about 2 – 3 slices

1/2 cup diced, peeled granny Smith apples (about 1/4 – 1/8 in cubes)

1/2 cup shredded Cheddar cheese

2 Tbsp chopper fresh herbs

1 cup buttermilk, plus extra for brushing on the tops

3 Tbsp everything bagel seasoning

Preheat your oven to 425 degrees. Line a baking sheet with parchment paper and set aside. In a large bowl, combine the flour, baking powder, salt and pepper. Grate the frozen butter using the large holes on a grater into the flour mixture. Gently mix with your hands to distribute the butter evenly and it looks like the butter is covered with flour.

Add in the bacon, apple, cheese and herbs. Stir to combine. Pour in the buttermilk and stir until just combined. The dough will be sticky and shaggy, not wet. Add a bit of flour if needed.

Transfer to a lightly floured work surface. Lightly flour the top of the dough and use your hands to pat out into a rectangle, about 1 inch thick. Fold the rectangle towards you and the rotate the dough counterclockwise. Roll it out gently using a rolling pin. Use a bouncing motion from the center of the dough, being careful not to lose the layers. Repeat the folding and rolling two additional times.

Roll the dough to about 1 to 1 1/4 inch thick. Using a floured biscuit cutter, cut your biscuit without twisting the edges. Place the biscuits on the prepared baking sheet. The biscuits should barely be touching to have them help each other to rise. Brush the tops with the leftover buttermilk and sprinkle everything bagel season over the top.

Bake for 18 to 22 minutes until the tops are golden brown and cooked through. Enjoy them warm.
