Strawberry Oatmeal Bars

My daughter has been asking for me to make her bars and as I was looking through the fridge and pantry to see what I had on hand and saw two containers of strawberries that no one had touched. I found this recipe for strawberry oatmeal bars and it was so simple to make!

Both kids have gobbled them up and I love they’re prefect for an after school snack or a sweet treat after dinner. I switched out the butter for coconut oil, but I’m going to try making them with butter next time. The crust was not as solid as I wanted and broke apart easily. They tasted great otherwise! They’re not too sweet and I love the crumble on top.

1 cup rolled oats
3/4 cup whole wheat white flour
1/3 cup light brown sugar, packed
1/4 tsp ground ginger
1/4 tsp salt
6 Tbsp unsalted butter, melted
1 tsp cornstarch
1 Tbsp freshly squeezed lemon juice
1 Tbsp sugar
2 cups diced strawberries

Preheat oven to 375 degrees.  Line a 8″ square pan with parchment paper and set aside.

Combine the oats, flour, brown sugar, ginger and salt in a medium bowl. Pour in the melted butter and stir until clumps form and the mixture is evenly moistened. Remove 1/2 cup of the crumble and set aside. Transfer the remaining crumble into the prepared pan and press down to form a crust.

Take half of the diced strawberries and cover the crust evenly. Sprinkle on the cornstarch and lemon juice and 1/2 tablespoon of sugar over the strawberries. Place the remaining strawberries over this layer and sprinkle the remaining 1/2 tablespoon of sugar over this layer. Sprinkle the reserved crumb topping over the strawberries.

Bake the bars for 35 to 40 minutes until the fruit is bubbly and the topping is golden brown. Transfer the pan to a cooling rack and completely cool. Remove the bars from the pan and cut into 16 small bars. You can make a glaze for them, but I skipped it this time.
