I’ve missed the last couple of months of #FilltheCookieJar because, well….life got in the way. I was determined to make it back this month for the summer theme! I had a little extra time this month with the holiday on Monday and was excited to try a different and unique cookie recipe. I went with something a little sweet with a touch of savory and came up with these delicious basil lime cookies.
They’re slightly crispy with a hint of lime and basil. My daughter was confused when she saw me chopping basil for a dessert recipe, but she’s loving these cookies! Basil is one of the things that remind me of summer. I grow a bunch of it and use it to make pesto, for tomato mozzarella salad and anywhere else I can use it. And you can’t forget about limes…hello margaritas!
1 stick unsalted butter, softened at room temperature
3/4 cup plus 1 Tbsp sugar
1 egg
1/2 tsp vanilla
zest of 2 limes
3 Tbsp very finely chopped fresh basil
1 3/4 cup flour
1/2 tsp baking soda
1/2 tsp salt
Preheat your oven to 375 degrees. Line two cookie sheets with parchment paper and set aside.
In the bowl of a stand mixer, cream together the butter and sugar until light and fluffy. Add in the egg, vanilla, lime zest and basil. Mix until combined. In another bowl, sift together the flour, baking soda and salt. Add into the wet ingredients and mix until a dough forms.
Scoop out the dough in tablespoon sized balls on the prepared baking sheets leaving an inch between each cookie. Bake between 8 and 12 minutes until the cookies start to turn golden brown. Transfer to a cooling rack and allow to completely cool. Store in an airtight container.

I have to admit that I wondered about the basil, just like your daughter. After reading the recipe, I can see where it would be a great addition to the cookie. I have some basil in the yard, I will have to give these a try. Thanks so much for being a part of the fill the cookie jar group! Glad you were able to be a part this month.
