I’m excited to kick off my #Choctoberfest recipes with this scrumptious recipe for shortbread cookies! Shortbread cookies are one of my favorite cookies – they’re simple, but oh so good! I love the combination of the vanilla and chocolate and they weren’t too sweet.
These cookies feature baking cocoa from one of our sponsors, Rodelle. I’m always on the hunt for premium ingredients and this cocoa did not disappoint! It’s much darker in color than other cocoa I’ve used in the past and has a richer flavor. Vanilla dough
2 1/4 cups flour
3/4 cup sugar
3 oz butter
1 egg
2 Tbsp milk
2 tsp vanilla extract
Chocolate dough
2 cups flour
2 Tbsp Rodelle Gourmet Baking Cocoa
3/4 cup sugar
3 oz butter
1 egg
4 Tbsp milk
In a bowl of a stand mixer, mix all ingredients for the vanilla dough. Once combined, wrap in plastic wrap and place in the refrigerator for at least an hour. Repeat the same process with the chocolate dough.
Lightly flour your working surface and roll out each dough to a 12×12 square. Your dough should be about 1/4 inch thick or less. Place the chocolate dough on the vanilla dough and cut in half. Place the one layered piece on the other and thinly roll out the dough. Roll the dough from the short side into a log. Wrap with plastic wrap and place back into the refrigerator for 30 minutes.
Preheat your oven to 325 degrees and line a baking sheet with parchment paper. Slice the log into 1/4 to 1/2 inch slices and bake for 15 to 25 minutes depending on the thickness of your cookies. Allow to completely cool on a wire rack.
