Chocolate Peanut Butter Pudding Pie

I’m excited to share my final recipe of #Choctoberfest 2020! I’ve been picking up grab and go lunches for my kids and that means we have way more milk than we can drink. I decided to look for a recipe for pudding and stumbled on this recipe. It’s basically a big peanut butter cup – creamy chocolate peanut butter pudding with a graham cracker crust and chopped peanuts on top.

Unfortunately, I’m not able to eat it since dairy and I are not friends … but I have three taste-testers in my house. My family gave it 2.5 thumbs up. My son was the only one who was iffy on it – he’s not a big sweet eater. I’m not putting much weight into his vote. I will say it smells amazing!

Frozen Hot Chocolate

When I started planning for this year’s #Choctoberfest, my kids were very interested in what I was going to make. I mentioned frozen hot chocolate and they’ve been begging me to make it for over a week.

My kids loved these drinks and are now begging me to make them every night. They gave me a rave review of them as I can’t drink regular milk. It was also a great way to use up some of the pints of milk I’ve been getting from our school district’s grab and go lunch program. I will need to make myself one the next time with non-dairy milk.

These bars were so good. They are packed with marshmallows, peanut butter and chocolate. They’re also no-bake bars … simple and easy! My family devoured them in now time at all. I’ll definitely be making them again.

Peanut Butter Chocolate Swirl Loaf Cake

One of my husband’s favorite candy is peanut butter cups and with his birthday being today, I wanted to make him a cake that reminded him of them. My cake is a little more peanut butter heavy than I had hoped, but it’s just as a delicious and by adding the chocolate drizzle, it helped amp of the chocolately (is that a word?) goodness.

The cake is moist, full of peanut butter and chocolate and perfect with a cup of coffee to start your morning … or a pick-me-up in the middle of the afternoon.

Imperial Sugar is helping me with all my #Choctoberfest baking with their generous donation of granulated sugar they sent me. It’s been giving me a lot of reasons to spend time in my kitchen.

*Disclosure: I received the product to sample from Imperial Sugar. All thoughts and opinions are my own.

Monster Mash-up Filled Cupcakes

Today is National Chocolate Cupcake day  and the perfect way to celebrate is with these Monster Mash-up Filled Cupcakes. It’s also the fourth day of #choctoberfest and today’s cupcakes features a product from one of our sponsors, Sprinkle Pop. Sprinkle Pop creates trendy sprinkle mixes that you can’t find anywhere else. I used the Monster Mash-up mix – which included pumpkins, eyes, ghosts, and so much more. I love that they color over 50% of their sprinkles in-house, so each batch is a one-of-a-kind experience. Even better – all their orders are shipped for free in the US. What sprinkle mix would you love to create something with?

I made these cupcakes for my cheerleading squad. They’ve been working really hard on their half-time routine and parade routine that they deserved a little treat. Really..I didn’t need 2 dozen cupcakes sitting on my kitchen counters for days calling my name to eat all of them! HA! The chocolate cupcakes are moist, the frosting has the perfect amount of sweetness and then the center is filled with sprinkles. Surprise!

Instant Pot Triple Chocolate Cheesecake

Triple chocolate cheesecake. Do I need to say anything more?

I was nervous to try making a cheesecake in my IP again as the last time I made one, I accidentally dropped it and made it again. I didn’t want that to happen again, so I was super careful … and as you can see, it came out perfectly. These cheesecake is for all the chocolate lovers – chocolate cookie crust, rich chocolate cheesecake, and a layer of chocolate ganache. It is a super rich dessert – a little piece goes a long way. My husband thought it was too chocolately …. who is this man?!?!? There’s nothing as too much chocolate!

S’mores Bread Pudding

My kids love s’mores and are always asking to have a fire pit. The weather has not cooperated, it’s rained, rained and rained most of the summer. Needless to say, there have been no s’mores making at our house. I wanted to make something that would give the feeling of eating s’mores but without the fire. This recipe sure accomplished that!

You get gooey marshmallows, melted chocolate and crunchy graham crackers all in a soft bread pudding. It was really good and definitely satisfied my kids need to make s’mores.
