Small Batch Chocolate Cupcakes with Cookie Dough Frosting

Did you know today is “National Cupcake Lovers Day”? Me either, until a blogging friend invited me to participate in a fun challenge to share cupcake recipes. My entire family is a big fan of cupcakes, though I rarely make them for us. I think the problem is that most recipes make two dozen cupcakes and I really don’t need that many cupcakes sitting on my kitchen counter for days on end.

I started looking around for recipes that make only a few cupcakes and found one for chocolate cupcakes. Perfect! Then I set out to find one for frosting and the first one I found was for cookie dough. How fun, right?

I whipped these cupcakes up the other night so I would be ready to celebrate today with these cupcakes. The cupcakes are moist and full of chocolate flavor. I’ll probably add chocolate chips the next time I make them. My taste-tester of a husband exclaimed that the frosting was amazing. He requested I make it again but with vanilla cupcakes.

Shoofly Cupcakes

Today is #FoodBloggerLove day and I’m excited to participate this year. The event had a couple of ways to participate and I chose to be assigned another blogger and show them some love.

I received Amanda’s blog, Crafty Cooking Mama and was excited to learn we have a lot in common. We live about an hour from each other (crazy, right!?), we both enjoy wine and have kids and bully breed dogs.

I decided to make her recipe for Shoofly Cupcakes. I love Shoofly pie and these cupcakes tasted just like it. They’re packed full of molasses flavor and topped with sweet crumble. I would love to figure out a way to make the centers gooey like wet-bottom pie.

Monster Mash-up Filled Cupcakes

Today is National Chocolate Cupcake day  and the perfect way to celebrate is with these Monster Mash-up Filled Cupcakes. It’s also the fourth day of #choctoberfest and today’s cupcakes features a product from one of our sponsors, Sprinkle Pop. I made these cupcakes for my cheerleading squad. They’ve been working really hard on their half-time routine and parade routine that they deserved a little treat. Really..I didn’t need 2 dozen cupcakes sitting on my kitchen counters for days calling my name to eat all of them! HA! The chocolate cupcakes are moist, the frosting has the perfect amount of sweetness and then the center is filled with sprinkles. Surprise!

Chocolate Cupcakes

Madeline is cheering again this year and each week different parents are asked to bring in a snack and drink. A couple weeks ago it was my turn and it also happened to be on the of coach’s birthday, so I thought cupcakes were the perfect treat after the game. Now I usually would have just made a regular cupcake recipe, but one of the girls has an egg allergy. I didn’t want to exclude her from the group, so I searched for a new recipe. The recipe I found that reminded me of the cake in my black bottom cupcake recipe. I made a few tweaks to the recipe based on some of the reviews and I think they turned out really good.

They were super moist and all the girls thought they were delicious! I made sure to use my expensive unsweetened cocoa powder and coffee to make sure the chocolate flavor was intense. I topped them with a simple butter cream frosting and sprinkled a little bit of red sugar sprinkles on top.

3 cups flour
2 cups sugar
1 tsp salt
2 tsp baking soda
1/2 cup unsweetened cocoa powder
3/4 cup canola oil (I am going to cut this back to 2/3 cup next time I make it)
2 Tbsp distilled white vinegar
2 tsp vanilla extract
1 cup cold water
1 cup cold coffee
1/2 bag of chocolate chips

Preheat oven to 350 degrees. Line two muffin tins with paper liners and set aside.

In a large bowl, sift together the flour, sugar, salt, baking soda and cocoa powder. Make three wells in the dry mixture and add the oil into one, vinegar into the second and vanilla into the third. Pour the cold water and coffee over the entire mixture and stir well until just combined. Stir in the chocolate chips.

Divide the batter for 24 cupcakes, filled 3/4 way. Bake for 22 to 25 minutes until a toothpick inserted in the middle of one cupcake comes out clean. Remove from muffin tins and allow to completely cool on a wire rack. Frost with your favorite icing.
