Rocky Road Bars

I’m excited to kick off #Choctoberfest 2020 with this recipe for Rocky Road Bars. This is my 5th year participating in this fun blogger event. I love chocolate and this is the perfect event for me.

These bars were so good. They are packed with marshmallows, peanut butter and chocolate. They’re also no-bake bars … simple and easy! My family devoured them in now time at all. I’ll definitely be making them again.

Don’t forget to check out the kick-off #Choctoberfest post for a giveaway!

Rocky Road Bars packed full of marshmallows, peanut butter, rice cereal and chocolate.

3/4 cup creamy peanut butter

1/4 cup unsalted butter, cut into pieces

2 cups semi-sweet chocolate chips

1 1/2 cups Rice Krispie cereal

3 cups mini marshmallows

Line a 8×8 square baking pan with aluminum foil, leaving extra over the sides for handles. Lightly spray with non-stick cooking spray and set aside.

In a microwaveable bowl, add the peanut butter, butter and chocolate chips. Microwave on medium power for 45 second intervals until everything is melted together. Mix together and allow to cool slightly. Pour in the cereal and marshmallows. Stir everything together and pour into the prepared pan. Spread evenly in the pan.

Place in the pan in the refrigerator and chill for at least 3 hours. Lift the dessert out of the pan using the aluminum handles. Cut into 16 squares and serve. Store in an air tight container in the refrigerator.
