My husband and I had a date night the other weekend. It was so nice and long overdue. We ate a small farm-to-table restaurant and I ordered a delicious fish entree that came with a side of mushroom risotto. It was so good and I forgot how much I enjoyed risotto.
I found this recipe for risotto made in the Instant Pot and decided to give it a try. Making risotto can be time consuming, but not anymore. There’s a little bit of prep needed for this recipe, but in less than 30 minutes I had dinner on the table.
The risotto was cooked perfectly and the chicken was so tender. I used homemade chicken bone broth for my liquid and it was full of flavor. My kids were iffy on it, but despite their complaints, they cleaned their plates. I have enough for leftovers too!
My son has been asking me to make lasagna; it’s one of his favorite meals. I found this recipe for “lazy lasagna” made in the Instant Pot. I thought it would be a great way to give him the flavors of lasagna without the time needed to make it. This recipe is also great for a mid-week dinner … especially when you have a limited time to get dinner on the table before running to evening events.
We thought it was even better the next day for leftovers!
Chicken thighs can be boring at times, but when you cook them in a sweet soy sauce, it makes them phenomenal! This recipe was quick and easy to make. I skipped the step of browning the skin before throwing everything into the Instant Pot, but it turned out great!
In about 30 minutes, I had a delicious dinner and enough for leftovers. The sauce is sweet, salty and a little sticky. I served the chicken with noodles and a side of green beans. My husband and I both loved this recipe, my kids weren’t 100% in love with it … but they ate it. Recently, they both have been complaining that everything is “chewy.” Oh the joys of being a parent!
The last time I was at the Farmer’s market I grabbed a butternut squash and wasn’t sure what to make with it. I was in the mood for soup and found a recipe for one made in the Instant Pot. Even better, this recipe is dairy-free so I could eat it without feeling horrible afterwards.
This soup was delicious – it tasted like fall in a bowl. It had those deep flavors of the curry; it was warm on the back of my throat and was creamy. I saved a container to freeze for one of those cold, winter nights when all you want to do is curl up with a bowl of warm soup and a hunk of crusty bread.
My husband and I both love rice pudding and when I happened to have all the ingredients to make a batch, I decided to try this new recipe. I loved that it’s made in a pressure cooker… not more watching a pot on the stove. It was so easy to make and was delicious. It’s a rich pudding, but isn’t that what comfort food is all about.
My husband likes raisins in his rice pudding, but you could easily swap out for dried cranberries or other dried fruit. This pudding will thicken up as it sits. Add a little milk or cream to thin it out if you prefer a thinner pudding.
Triple chocolate cheesecake. Do I need to say anything more?
I was nervous to try making a cheesecake in my IP again as the last time I made one, I accidentally dropped it and made it again. I didn’t want that to happen again, so I was super careful … and as you can see, it came out perfectly. These cheesecake is for all the chocolate lovers – chocolate cookie crust, rich chocolate cheesecake, and a layer of chocolate ganache. It is a super rich dessert – a little piece goes a long way. My husband thought it was too chocolately …. who is this man?!?!? There’s nothing as too much chocolate!
I love a good lo mein …. my kids on the other hand, do not. I thought this would be one of the those recipes my kids would love, but they complained all through dinner about how gross it was, it was chewy and disgusting. My daughter even forbid me to never make this recipe again. My husband and I thought it was really good and was packed full of flavor. I might try it again and switch out the sesame oil and see if my kids like it then…..thought I’m not sure I want to hear the complaining again if they don’t. Ha!
This recipe can easily be switched out to include whatever veggies you have on hand. I made it a meatless dish, but a piece of grilled chicken, steak or shrimp would be a great addition.
It’s been frigid here in PA for the last 2 weeks and I’m so ready for some warmer temps. I enjoy winter, but this cold weather we’ve been having is extreme. School was closed two days last week because of snow and the extreme cold. As much as I love my kids, I’m so ready for them to go back to school! Cold weather also makes me want to do nothing…not good for getting back to working out and eating better. I’ve made this soup and chili because I needed some comforting food.
We have a small restaurant near us that has amazing baked potato soup and I’ve tried to duplicate it numerous times and I’m not there yet…but I’ll get there. This version of soup was quick and easy to make – especially when using the Instant Pot! I think the prep may have taken a little longer than the actual time it cooked. I enjoyed this soup the next day for leftovers. I think having it sit in the fridge for a day enhanced all the flavors even more.
I love chili – it’s the perfect meal for a cold day! Even better is when you can whip up a batch of chili in less than 20 minutes and it tastes like it’s been cooking all day! This copycat recipe is the perfect time to participate in this month’s Fantastical Food Fight. This month’s theme was “fast food copycat recipes” and had me thinking for a while of what to make. We don’t do much fast food anymore, but on occasion I will grab a bowl of chili from Wendy’s and enjoy!
I loved the flavors of the chili and while it wasn’t exactly like their recipe, it’s pretty darn close! My husband and I loved it and we kept going back for more!
The weather has finally turned to fall this past week and I’ve been in the mood to make soup. I had a half a head of cauliflower left from last week and went searching on pinterest to find a soup recipe that included cauliflower and found this recipe. It was perfect because squash was on sale and I had everything else in my kitchen to make it.
I threw it all in my Instant Pot and in less than 30 minutes, we had dinner on the table. The soup is so creamy and hearty. Neither one of my kids liked it, but that’s ok ….it leaves me with leftovers for the week! I topped it with shredded Monterey jack cheese and chopped parsley, but you could top it with croutons, green onions, or sour cream.
