My son has been asking me to make lasagna; it’s one of his favorite meals. I found this recipe for “lazy lasagna” made in the Instant Pot. I thought it would be a great way to give him the flavors of lasagna without the time needed to make it. This recipe is also great for a mid-week dinner … especially when you have a limited time to get dinner on the table before running to evening events.
We thought it was even better the next day for leftovers!
1 lb ground beef
1 cup diced onion
2 cloves garlic, minced
24 oz jar spaghetti sauce
3 cups water
4 cups dry mafalda noodles (I used Cavatappi noodles)
1 cup cottage cheese
1 cup shredded mozzarella
salt and fresh ground pepper
On your Instant Pot, press the saute button. When hot, add in the ground beef and season with salt and pepper. Cook until all the meat is browned. Add in the onions and garlic. Drain any grease if necessary. Press cancel on your IP.
Add in the jar of spaghetti sauce and mix to combine. Add the noodles next. Do not mix. Pour the water over the pasta and press it down until all the noodles are covered by water. Cover you IP with the lid. Press manual, high pressure for 4 minutes.
When finished cooking, quick release the pressure. Stir in the cottage cheese (you could use ricotta if your prefer). Top the pasta with a layer of mozzarella. Cover with the lid and allow the cheese to melt. Dish out the pasta into bowls and serve.
