Honey Cinnamon Zucchini Bread

My kids love zucchini bread and I’m always trying different recipes. They both really enjoyed this recipe. It’s a very moist bread that has deep flavors of olive oil, honey and brown sugar. This recipe is great to freeze as well. I sliced it, wrapped it in plastic wrap and then placed it in the freezer.

We all enjoyed it different ways. My kids ate it just the way it is. I warmed a slice and added a slice of butter and let it melt. My husband slathered it with cream cheese.

2 eggs
2/3 cup olive oil
2/3 cup brown sugar
1/3 cup raw honey
2 tsp vanilla
2 cups shredded zucchini
2 cups flour
1 tsp salt
1 tsp baking soda
1 tsp baking powder
1 1/2 tsp cinnamon

Preheat your oven to 350 degrees. Spray a loaf pan with nonstick cooking spray and set aside. In a large bowl, combine the eggs, olive oil, sugar, honey and vanilla. Mix to combine. Stir in the shredded zucchini.

In a separate bowl, combine the dry ingredients. Add it to the wet mixture and stir until just combined. Pour into the prepared pan and bake for 45 to 50 minutes or until a toothpick inserted in the center comes out clean. Allow to cool slightly and then transfer to a wire rack to completely cool. Slice and serve.
