Instant Pot Strawberry Jam

I bought my kids strawberries … which they wanted, but didn’t eat. I was going to make a strawberry cake, but saw a recipe for jam using the Instant Pot. My IP hasn’t had much use lately beside making tea, so I thought I would give this recipe a try.

It was super easy to make and requires only three ingredients. It’s perfect to enjoy on a piece of English Muffin bread or as the jelly in your PB&J sandwich.

2 lbs strawberries, cut into quarters

1 cup sugar

4 Tbsp lemon juice

In your IP, mix together the strawberries and sugar. Cover with the lid and allow to macerate for 20 minutes to have the strawberries release their juices. Add in the lemon juice and stir.

Lock the lid and cook on high pressure for 1 minute. Allow the IP to naturally release for 15-18 minutes and then quick release any remaining pressure. Puree the mixture with an immersion blender until smooth. Be care as the mixture is very hot. Turn the IP to saute and cook the mixture until it reduces about half way – about 20 minutes. Allow to cool and skim any foam off the top.

Transfer to sterilized glass jars and allow to completely cool before placing in the refrigerator.
