It’s feeling like summertime here in PA and that calls for a fancy lemonade! This lemonade concentrate is so good and would be perfect for a cocktail too – just add an ounce of gin or vodka to each glass. The ginger and thyme are subtle and make lemonade a little unique and different.
The concentrate is simple and easy to make. Just a few ingredients, a couple hours and you have the start of a delicious drink.
2 cups water
2/3 cup honey
12 sprigs fresh thyme
3 Tbsp sliced fresh ginger
3/4 cup lemon juice
2 Tbsp lemon zest
2 liters cold water (still or sparkling)
In a small saucepan, combine the water, honey, thyme and ginger. Heat to medium-high heat and bring to a boil. Reduce heat and simmer for 5 minutes. Remove from the heat and stir in the lemon juice and zest. Allow to steep for 20 minutes.
Using a fine-mesh strainer, strain the concentrate into a medium bowl. Place in the refrigerator and chill for at least 2 hours.
To prepare a drink, fill a glass with ice. Add in 1/4 cup of lemon mixture, 1/2 cup of water and 1 oz of gin or vodka if desired. Stir to mix and garnish with a thyme sprig and thinly sliced lemon. The concentrate will be good for up to 5 days in the refrigerator.
