I’ve been wanting to make a lemon recipe for a couple weeks and have been debating between several recipes. After seeing lemon loaf while picking up a coffee at Starbucks, I knew this was the recipe I would settle on. It definitely did not disappoint. It was so good.
The loaf is packed full of lemon flavor and the frosting on top added the perfect amount of sweetness. It’s perfect for breakfast or an after-school snack. I’ll be adding this recipe to a regular rotation in our house.
1 cup sugar
3 eggs
1 cup sour cream
1/2 cup vegetable oil
zest of 1 lemon
2 Tbsp lemon extract
1/2 tsp vanilla extract
1 1/2 cups flour
1 12 tsp baking powder
1/4 tsp salt
1/4 tsp baking soda
Frosting:
1 cup powdered sugar
1 Tbsp lemon juice
1 Tbsp milk
Preheat your oven to 350 degrees. Lightly spray a 9×5 loaf pan with non-stick cooking spray and set aside. In a medium bowl, mix together the flour, baking powder, baking soda and salt. In a separate large bowl, using a hand mixer, combine the eggs, sugar and sour cream until smooth. Slowly add in the oil while the mixer is on low speed. Mix in the lemon zest, lemon and vanilla extracts.
Fold in the dry mixture to the wet batter until just combined. Transfer to the prepared loaf pan. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean. Allow the bread to completely cool in teh pan before removing. Trasnfer to a wire reack.
In a small bowl, combine the sugar, lemon juice and milk. Mix with a whisk until smooth. Drizzle over the top of the bread and allow to harden before slicing.
