Yup .. late night scrolling on TikTok and I stumbled on a video of someone making Dada Rice Cakes. This recipe was perfect because I had all the ingredients and who doesn’t love a chocolate sweet treat! I whipped it together after dinner the other night and it was great little snack to enjoy. I definitely will be making it again and adding mix-ins and trying over varieties of chocolate.
2 cups semi-sweet chocolate chips
2 Tbsp coconut oil
1/4 cup creamy peanut butter
5 rice cakes, broken up into small pieces
In a large bowl, combine the chocolate chips and coconut oil. Melt in a microwave or over a double boiler until smooth and creamy. Stir in the peanut butter until combined. Fold in the rice cake pieces.
In a parchment paper lined 9×13 baking pan, evenly spread out the mixture. Place in the refrigerator for 30 minutes to harden. Remove and break into small, bite-sized pieces. Enjoy. Store any remaining pieces in an air-tight container and refrigerate.
