Pesto Chicken Sliders

We had a busy week last week and I was looking for a quick and easy dinner option. This recipe for Pesto Chicken Sliders was perfect – even so much that my kids asked me to make them for their lunches. I bought ingredients to make them again this week.

These sliders took no time to make since I had bought a rotisserie chicken that I had already had shredded. I did make my own pesto, but this time I bought a jar to see how premade pesto would be in these sliders.

9 slider rolls (I used mini kaiser rolls)

1/4 cup pesto

2 cups shredded, cooked chicken

1 cup shredded mozzarella cheese

2 Tbsp butter, melted

1/2 tsp garlic powder

1 tsp dried Italian seasoning

Preheat your oven to 375 degrees. Lightly spray a 9×13 baking dish with nonstick cooking spray and set aside. Slice the rolls in half and place the bottom halves into the prepared dish. Evenly spread the pesto on the bottom halves. Layer the shredded chicken over the pesto and then the mozzarella cheese. Place the top of the rolls over and press down slightly.

In a small bowl, melt the butter and mix in the garlic powder and Italian seasoning. Brush the melted butter over the top of the rolls. Cover the pan with aluminum foil and bake for 15-20 minutes or until the cheese is melted and the sliders are warm.
