Quick Pickled Red Onions

We love pickles and other pickled veggies in our house. I knew this recipe for quick pickled red onions would be a hit. It’s a simple and easy to recipe to make and definitely something that I’ll always have available in our fridge.

We’ve enjoyed them in salads, on burgers and my husband recently made a grilled cheese with them.

1 large red onion, thinly sliced

1/2 cup water

1/2 cup white vinegar

1 1/2 Tbsp sugar

1 tsp salt

In a small sauce pan, combine the water, vinegar, sugar and salt. Heat the mixture over medium low heat until the sugar and salt is dissolved. In a pint mason jar, pack the sliced onions very tightly. Carefully pour the brine over the onions until covered. Allow to cool at last 30 minutes. Cover the jar with a lid and place in the refrigerator. Onions will be pickled after 30 minutes in the fridge. Use up within 3 weeks … but I doubt they’ll last that long.
