I’ve been looking to reduce what I have in my pantry and start using up what is filling the shelves. My goal is to redo our pantry in the fall. I have a couple of cans of condensed milk and after looking for recipes, I decided to go with something simple. Only three ingredients and you have this delicious mousse – or freeze it to make soft serve ice cream! I whipped it up after dinner for a little treat for me and my husband. The coffee flavor is intense, but the mousse is so fluffy and light!
1 Tbsp espresso powder
14 oz can sweetened condensed milk
1 pt heavy whipping cream
In a small saucepan, heat the espresso powder and condensed milk over medium low heat until combined. Cook for 3 to 5 minutes. Transfer to a stand mixer bowl and refrigerate for 30 minutes. Add in the heavy cream and beat for 8 to 10 minutes or until soft peaks form. You can eat it immediately, refrigerate for later or freeze to make soft serve ice cream. Enjoy!
