I received two leeks in my last CSA and I was looking for a fun and creative way to use them. I haven’t used leeks very often, but after making this pizza, I’m going to use them more! Leeks have a mild onion flavor and are sweeter than onions.
This pizza was amazing! The caramelized leeks with crispy bacon were the perfect combination! I used turkey bacon since that was what I had on hand, plus when I ate the extra slice I shouldn’t have eaten, I didn’t feel as bad! 🙂
6 slices of thick-cut bacon
2 medium leeks, sliced and cleaned
1 lb. store-bought pizza dough
1 tbsp olive oil
½ tsp garlic powder
¼ cup cream cheese, softened
1½ cup shredded mozzarella
¼ cup grated Parmesan
Cook the bacon according the package instructions. Crumble the bacon once it’s cooled. In a large skillet, add a little olive oil to the pan and heat over medium heat. Add the leeks and saute until soft, approximately 12 to 15 minutes. Remove from the heat and set aside.
Preheat your oven to 500 degrees. Roll out your pizza dough on a floured surface to 1/2 inch thick. Drizzle the crust with olive oil and then sprinkle on garlic powder. Spread a thin layer of the cream cheese over the crust. Top with half of the mozzarella and the caramelized leeks. Sprinkle the parmesan and then top with the remaining mozzarella. Bake for 10 to 12 minutes or until the crust is crispy and the cheese is melted. Top with the cooked bacon and slice.
