Pepperoni Pizza Roll-ups

We were invited to our old neighbor’s annual Halloween parade yesterday and I needed a quick recipe to make. It’s a potluck and there’s always so much delicious food. I was looking for an appetizer that would be ok at room temperature, finger-food and would take no time at all to make after a morning and early afternoon filled with lacrosse practice, a soccer game and a quick grocery shopping trip.

These Pepperoni Pizza Roll-ups were perfect! They use puffed pastry, pizza sauce, cheese and pepperoni. You could easily switch out the pepperoni to bacon, veggies or omit it all together. What is your favorite pizza topping that you’d add to your pizza roll-ups?

Air Fryer Pepperoni Pizza Rolls

My kids have been home virtual learning for over a year and they are hoping for some new hot lunch options. I whipped together a batch of these pepperoni pizza rolls and they loved them. They were simple and easy to make and can be customized to whatever your kiddos like.

This recipe made enough for my kids to have lunch one day and then I froze the remaining for lunch another day. While the picture of these rolls don’t show how amazing they are, trust me … they’re delicious.

Everything Tomato Tart

This savory tart is packed full of “everything” bagel seasoning, with creamy goat cheese and vine-ripened tomatoes. I was looking for something to make using the last few local tomatoes.

I wanted to make a quiche, but my family complains every time I make one – not sure why since it’s a pie made with eggs, cheese and veggies. I decide I would give this recipe a try and see how it goes. It was delicious and I love all the flavor from the everything bagel seasoning. I paired it with a green salad and enjoyed it for lunch. Quick note – I used premade bistro pizza dough as I had it on hand, but you could easily substitute for a homemade pizza dough or pie crust.

Caramelized Leek and Bacon Pizza

I received two leeks in my last CSA and I was looking for a fun and creative way to use them. I haven’t used leeks very often, but after making this pizza, I’m going to use them more! Leeks have a mild onion flavor and are sweeter than onions.

This pizza was amazing! The caramelized leeks with crispy bacon were the perfect combination! I used turkey bacon since that was what I had on hand, plus when I ate the extra slice I shouldn’t have eaten, I didn’t feel as bad! 🙂

Caramelized Onion, Bacon and Spinach Pizza

I’ve taken a few days off from blogging to spend some much-needed time with my family. Both my husband and I have been going non-stop lately and this break was needed! I haven’t done much cooking either, so I’ll be making up with it over the next couple of weeks with lots of new recipes.

I made this pizza a couple of weeks ago and it was a hit….despite it being a little more cooked than I would have preferred. I had to leave it in the oven for my husband to watch while I ran to an appointment and he left it in a little too long. It was still delicious! I love the flavors of the caramelized onion, bacon and spinach…all on a crispy crust.

Pepperoni and Cheese Dip – Secret Recipe Club

If you’re looking for an appetizer to take to your next party, this dip is for you! I’m excited to share today’s recipe from my Secret Recipe Club reveal, Our Table for Seven. Erin’s blog is all about her experience in cooking and baking. We have very similar styles and I found so many recipes that my family would enjoy – including Cheesy Chicken & Rice Soup, Grilled Cheeseburger Wraps and Pumpkin Scones.

Back to the dip, it tastes just like pepperoni pizza! It was the perfect snack while watching football yesterday (yes, I waited to make this recipe the day before I had to post it). Unfortunately, the Eagles lost….but we lifted our spirits by devouring this dip. Erin made this in a slow cooker, but I decided to whip it up on the stove top and worked out perfectly.

BLT Puff Pastry Pizza – Secret Recipe Club

Welcome to July’s Secret Recipe Club reveal for Group C. I’m excited to share this recipe since it was such a big hit at our table! My assignment this month was Lynsey Lou’s Making Your Days Delicious. Lynsey and I have a few things in common – we both use our time in the kitchen to relax and we both checked out the “What’s Cooking” board on the Nest. I wonder if we ever chatted about recipes back in the day! She’s married and has a super cute son too.

After looking through Lynsey’s recipes, I finally chose the recipe for BLT Puff Pastry Pizza. I knew it would be a quick and easy dinner to through together for our busy Monday nights. My daughter started a lacrosse clinic that’s about 35 minutes away and I’m always looking for something that I can quickly throw together and have enough time to eat before she needs to be there. This was the perfect recipe! It was really good and I didn’t change a thing. We will definitely be making this recipe again and again!

Garlic Shrimp and Spinach Pizza – The Secret Recipe Club

It’s the third Monday of the month and you know what that means…Secret Recipe Club reveals!!! I’m excited to share this month’s recipe with you! It comes from Sara who blogs at Cook with Sara. I feel like our styles of cooking are very similar, both perfect for sharing with our families and we both found our love of cooking from our relatives. I had a hard time picking out a recipe this month, since I was looking for sometime to make for dinner and tried to avoid desserts. So after spending hours looking through recipes, I decided on Sara’s recipe for Garlicky Shrimp and Spinach Pizza.

The pizza was really good and different. I made it for Ross and I on Friday night for dinner since I knew the kids would turn their noses up at it. Neither one like shrimp, so it wasn’t even worth the fight in getting them to try it. We’re still having dinner issues with Cooper – he now doesn’t like any of his favorites, mac & cheese, chicken nuggets – so I’m at a loss where to go from here. I used a different recipe for the crust – I made a whole wheat crust with a little Italian seasoning mixed in. I’ll just be sharing the sauce and toppings part of the recipe, so you can use whatever type of dough you prefer. Sara used a bread machine to make hers and incorporated mozzarella cheese and other seasonings.

Garlic Shrimp & Spinach Pizza | Join Us, Pull up a Chair

Sauce:
1 Tbsp butter
4 1/2 tsp flour
1 /4 tsp ground mustard
1/8 tsp smoked paprika
1/8 tsp salt
1 cup milk
1/4 cup shredded Parmesan cheese
1 Tbsp minced garlic

Topping:
1 Tbsp olive oil
1 cup sliced mushrooms
4 cups fresh baby spinach
1 Tbsp minced garlic
8 oz cooked shrimp (I used frozen Canadian cold water shrimp – just thawed and drained)
1 1/2 cups mozzarella cheese, shredded

Preheat your oven to 425 degrees. Once ready, roll out your dough to the desired size of your pizza. Bake on a pizza stone for 10 to 12 minutes. Remove from oven until ready to top.

While the crust is baking, prepare the sauce. Melt the tablespoon of butter in a small saucepan. Add in the flour, mustard, pepper and salt. Stir well and cook until it starts to bubble. Add in the milk and minced garlic. Continuously stir until the sauce becomes thick. Remove from the heat and add in the Parmesan cheese. Stir until the cheese has melted and pour over the pre-baked crust.

In a medium pan, warm the olive oil over medium heat and then saute the sliced mushrooms and garlic for 2 minutes. Add the baby spinach and cook until the spinach has wilted. Place the toppings over the sauce and then add the shrimp and top with the shredded mozzarella. Bake for an additional 10 to 12 minutes until the cheese has melted.
