My kids have been home virtual learning for over a year and they are hoping for some new hot lunch options. I whipped together a batch of these pepperoni pizza rolls and they loved them. They were simple and easy to make and can be customized to whatever your kiddos like.
This recipe made enough for my kids to have lunch one day and then I froze the remaining for lunch another day. While the picture of these rolls don’t show how amazing they are, trust me … they’re delicious.
Besides pepperoni, what would you included in your pizza rolls?
1 package of premade egg roll wraps
1/3 cup pizza sauce
2 1/2 cups shredded mozzarella cheese
1/2 cup chopped pepperoni
2 tsp olive oil
small bowl of water
Prepare a prep station to make your rolls. Place your cheese and toppings into small bowls and set aside. In a small bowl, add the olive oil.
Take one egg roll wrap and place approximately a teaspoon of the pizza sauce on the bottom third of the wrap. Add 2 tablespoons of cheese and a teaspoon of pepperoni (or your desired topping). To assemble the roll, take the bottom of the wrap and cover the filling. Fold in the left side of the wrap over the filling and then do the same thing with the right side. From the bottom of the wrap, start rolling over the filling and stop right before the top point of the wrapper.
Brush the top of the wrapper with water and then finishing rolling. This will seal your ingredients inside. Place your finished roll on a plate and continue making rolls until you’ve used all the wraps and/or ingredients.
When you’re ready to air fry your rolls, brush the tops of the rolls with olive oil you’re going to be baking. Place in the air fryer at 350 degrees and bake for 8-12 minutes until crispy and brown. Flip halfway through baking.
To freeze any remaining rolls, place on a baking sheet lined with parchment paper. Place in the freezer and once frozen, transfer to a plastic bag. When you’re ready to bake them, do not defrost before baking. Follow the instructions above to bake.
