I bought two avocados last week and hoped they would have been ripe to eat before I started a 3-day juice cleanse, but of course they weren’t ready. I was looking for recipes to use them up since I knew no one else in my family would eat them. I found this recipe for brownies and figured I’d give it a try.
They were easy to throw together on a whim especially since I had all the ingredients in my pantry. I didn’t tell my kids what were in the brownies, just that they had a secret ingredient. My daughter chimed in “it’s love.” Ah, how sweet! ⤠I’m going to keep the secret a little longer. š
1 1/2 cups dark chocolate chips
2 medium avocados, mashed (learn from my “mistake,” mash them and don’t just add it to the mixer)
3/4 cup sugar
4 eggs, room temperature
1 1/2 tsp vanilla
1/2 cup flour
1/4 cup cocoa powder
1/4 tsp salt
In a microwaveable-safe bowl, melt the chocolate chips, stirring every 30 seconds until completely melted. Set aside to cool.
Preheat oven to 350 degrees. Grease an 8×8 square pan and set aside. In the bowl of a stand mixer, mix together the mashed avocado and sugar until combined. Add in the eggs one at time, mixing after each one. Add in the vanilla and then the melted chocolate. Stir to combine.
In a small bowl, mix together the flour, cocoa and salt. Add the dry ingredients in three batches, mixing after each one. Transfer the batter into the prepared pan. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Place the pan on a cooling rack and allow to completely cool before slicing.
