My kids were doing so well and eating the bananas I’ve been buying for the last month … except last week. Not sure what changed, but there was four lonely bananas sitting on my counter that needed to be used up. I wasn’t in the mood to make a banana bread and decided to make a cake instead. Boy am I glad I went with this recipe!
It takes just like banana bread, but has a crunchy layer on top from sugar. It was so good and added the amount of sweetness the cake needed. My kids devoured it!
1/2 cup butter, melted and cooled
1 cup packed brown sugar
2 eggs, beaten
2 tsp vanilla extract
4-5 very ripe bananas, mashed
1 3/4 cups flour
1 tsp baking soda
1/2 tsp salt
1/2 cup chopped walnuts
1/4 cup sugar
Preheat your oven to 350 degrees. Spray an 8 or 9 inch pan with cooking spray and set aside.
In a large bowl, beat together the butter, brown sugar, eggs and vanilla with a hand mixer until combined. Stir in the mashed bananas. In a separate bowl, mix together the flour, baking soda and salt. Add the dry ingredients to the wet and stir until just combined. Fold in the walnuts. Pour the batter into the pan and evenly spread. Sprinkle the 1/4 cup of sugar evenly over the top.
Bake for 45 to 50 minutes or until a toothpick inserted in the center comes out clean. Allow to cool slightly and cut into bars.
