Chocolate Chip Banana Bars

Oh my kids. They want bananas. I buy bananas. They don’t eat bananas … and I end up with more overripe bananas. I needed to find yet another recipe to make and decided to give these chocolate chip banana bars a try. They smelled amazing and looked so good.

My daughter enjoyed them for breakfast, while my son preferred them as an after dinner snack. They remind me of banana bread, but much quicker to make. If you have overripe bananas, give them a try and let me know what you think!

5-6 overripe bananas, mashed

3/4 cup brown sugar, packed

1/4 cup canola oil

1/4 cup milk

2 eggs

1 3/4 cup flour

1 tsp baking soda

1/2 tsp salt

1 tsp cinnamon

1 cup mini chocolate chips

Preheat your oven to 350 degrees. Lightly grease a 15×10.5 inch baking pan with non-stick cooking spray. Set aside. In a large bowl, combine the mashed bananas, brown sugar, oil, milk and eggs. Add in the dry ingredients and stir until just combined. Fold in 1/2 cup of the chocolate chips.

Pour the batter into the prepared baking pan and spread evenly. Sprinkle the remaining 1/2 cup chocolate chips over the top. Bake for 20-22 minutes or until a toothpick inserted in the center of the cake comes out clean. Cool completely and slice into the desired sized squares.
