French Apple Cake

I was in the mood to do some baking, but didn’t want a labor intensive recipe. I had 2 apples that needed to be used up and was looking for a cake recipe to make. Of course, a simple search on Pinterest and I found this recipe for French Apple Cake.

It’s simple and easy to make … but oh so delicious! It’s a buttery cake, packed full of apples. I left off the dusting of confectioner’s sugar because I wasn’t serving it as part of meal. It was perfect without it!

1 cup flour

1 tsp baking powder

1/4 tsp fine sea salt

3/4 cup plus 1 Tbsp sugar

2 eggs, at room temperature

1 tsp vanilla extra

1/2 cup unsalted butter, melted

2 large baking apples, peeled and cut into 1/2 inch chunks

1 Tbsp fresh lemon juice

Preheat your oven to 375 degrees. Grease a 9-inch spring-form pan and set aside. In a small bowl, combine the flour, baking powder and salt. Set aside.

In a large mixing bowl, add in the 3/4 cup of sugar, eggs and vanilla. Using a whisk, mix for 2 minutes or until combined. The mixture will be grainy. Add in half of the dry ingredients into the eggs/sugar mixture and then half of the melted butter. Stir together. Repeat with the remaining flour and melted butter.

Toss the apples with lemon juice and then fold into the batter with a spatula. Pour into the prepared pan and evenly spread. Sprinkle the remaining tablespoon of sugar over the top. Tap the pan on the counter 5 times before placing into the oven. Bake for 40-50 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.

Allow the cake to cool on a rack for 15 minutes. Run a thin knife around the edge of the pan and then release the spring-form. Slice and serve warm if desired. If you want a little extra sweetness, dust with confectioners sugar.
