My Instant Pot has not seen much action lately, so I figured I would break it out and try a new recipe. I’m so glad I did. I loved this recipe for Honey Garlic Chicken. My kids were iffy on it and complained throughout dinner. They ended up eating it all, but didn’t take up the leftovers on our “clean up” dinner night.
The chicken was falling apart as I was taking it out of the Instant Pot. The sauce was sweet, thick and I love the garlic in it. I served it over jasmine rice with a side of steamed green beans. It’s a great dinner to make during the week and have enough for lunch leftovers the next day.
3 – 4 boneless, skinless chicken breasts
1/2 cup honey
1/3 cup soy sauce
1/3 cup onion, diced
1/4 cup ketchup
2 Tbsp vegetable oil
4 garlic cloves , minced
3 tsp cornstarch
1/4 cup water
salt and fresh ground pepper
In the Instant Pot, add in the chicken and season with salt and pepper. In as mall bowl, whisk together the honey, soy sauce, onion, ketchup, oil and garlic. Pour it over the chicken and close the lid on your Instant Pot. Cook on manual/High pressure for 15 minutes and then quick release. Remove the chicken from the pot and either shred or cut up the chicken.
In a small bowl, combine the cornstarch and water. Pour into the Instant Pot and mix together with the sauce. Press the saute button and cook for about 5 minute or until the sauce has thickened. Returned the shredded chicken to the Instant Pot and stir to coat the chicken. Serve over rice. If desired, top with sesame seeds and sliced green onions.

Was it enough liquid? Mine sometimes goes to BURN when it doesn’t sense enough liquid.
