Strawberry Cheesecake Overnight Oats

I’ve been doing some late night scrolling on TikTok … who hasn’t? Ha! I kept coming across videos with users making overnight oats and this version of Strawberry Cheesecake had me wanting to try it. I haven’t made overnight oats in awhile as I’ve been intermittent fasting for a couple years. I’m on a little break right now before I start up again, but wanted to give this recipe a taste.

It was really good. I should have added a bit more honey for a little more sweetness, but it was really good. I bet it would be even better with fresh local strawberries. I think a little a crumble of graham cracker crumbs on top would be so good too!

1/3 cup rolled oats

1/2 cup vanilla almond milk (or your choice of preferred milk)

1 Tbsp sugar-free cheesecake pudding mix

1 tsp chia seeds

1 Tbsp honey or maple syrup

dash of salt

1 cup diced strawberries or other fruit

In a bowl, mix together all ingredients expect for the fruit. Transfer half to a pint mason jar. Top with half of the strawberries and repeat. Cover and place in the refrigerator overnight. Pour into a bowl and add additional diced strawberries and other desired topping. These can be kept refrigerated for up to three days.
