With the price of groceries lately, I’ve been trying to make more basic items at home. Granola is one of those things that is much less expensive to make at home and it’s so simple. This granola only use four ingredients and is ready in about 45 minutes. My daughter has been using it as a topper for her acai bowls, but it would be great on top of yogurt or as cereal.
5 cups rolled oats (also called old fashioned oats)
1/2 cup honey
1/2 cup peanut butter
1 tsp vanilla extract
Preheat your oven to 275 and line a large baking sheet with parchment paper. Set aside. Add the oats to a large bowl. In a liquid measuring cup, add in the honey and peanut better. Microwave for 45 seconds and stir to combine. When smooth, stir in the vanilla.
Pour the peanut butter honey mixture over the oats and stir to combine. Spread the oats evenly onto the prepared baking sheet. Bake for 20 minutes. Stir and then press back into an even layer. Bake for another 10-15 minutes for until the granola start to turn light golden brown. Allow to completely cool and then transfer to an airtight container. It will keep for up to 2 weeks … if it lasts that long!
