Summer lacrosse started for my daughter. Our weekends are filled with games and traveling for the next month, which means I’m doing very little cooking on the weekends.
I had some random leftovers in the freezer that needed to be used up, and it was perfect to give these mini Naan pizzas a try. They were so good and would be perfect to throw together for lunch. They would be great for lunch when my kids are back to school.

6 mini Naan
1/3 lb very thin slices of ham (I used Tavern ham)
4 oz Swiss cheese, shredded
1/2 – 2/3 cup leftover pulled pork
Dijon mustard
Chopped pickles
Preheat your oven to 350 degrees. Place the 6 mini Naan on the pan and spread a thin coat of Dijon mustard over the top. Divide the ham between all 6 and then top with the shredded cheese. Evenly top with the pulled pork.
Bake for 8 – 10 minutes until the cheese is melted and the Naan has started to get crisp. Remove from the oven and top with the slice pickles. Serve immediately.
