I’m kicking off #Choctoberfest with bite-sized pieces of delicious fudge! I figured I would start with the “healthiest” recipe and then it’s all downhill from here. It’s the perfect sweet treat when you’re craving chocolate. I could only eat one piece – it’s a very rich treat. One of things I liked with this recipe is that it is naturally sweetened with local honey, it’s dairy-free, vegan and packed with healthy fats from the coconut oil.
1/2 cup coconut oil, melted
1/4 cup honey or maple syrup
1/2 cup unsweetened cocoa powder
1/4 tsp vanilla extract
pinch of salt
unsweetened shredded coconut
Line a small glass dish with parchment paper and set aside. In a medium bowl, combine the melted coconut oil, honey, cocoa powder, vanilla extract and salt. Whisk together until the mixture is completely combined. Pour into the prepared dish and place in the refrigerator. Allow to chill for at least an hour or until the coconut oil has solidified. Cut into bite sized pieces. Sprinkle with the shredded coconut and serve. You could also make them in a mini muffin pan to have uniform pieces.
