Chicken, Pressure Cooking

Honey Bourbon Chicken

I’m working on using my Instant Pot more often and I’ve already made several recipes in the last couple days. This recipe for Honey Bourbon Chicken was one of them and it was delicious! Throw all the ingredients into the IP, turn it on and let it do its thing. I served it with a side of brown rice and green beans. My kids were iffy on it but my husband and I love it – and it made more than enough for a couple lunches throughout the week.

What have you made in your IP that you love? My next recipe is to try a cheesecake! I’m part of a big group on Facebook and I love seeing all the cheesecakes being made and it’s definitely inspired me to give it a try.

Honey Bourbon Chicken | Join Us, Pull up a Chair
1 1/2 lbs boneless, skinless chicken thighs
salt & fresh ground pepper
1/2 cup diced onion
1 cup honey
1/2 cup soy sauce
1/4 cup ketchup
2 Tbsp vegetable oil
2 tsp minced garlic
1/4 tsp red pepper flakes
2 Tbsp cornstarch
1 Tbsp water

Add all the ingredients except for the cornstarch and water into your IP. Lock the cover and set to steam. Cook on the chicken setting for 15 minutes. Release the pressure (see your manual on how to this step). Remove the chicken and dice or shred. Return on the pot. Mix together the cornstarch and water until it forms a paste. Turn the IP to saute. Add in the cornstarch mixture and cook for an additional 2 to 3 minutes until the sauce thickens.
