Caramelized Onion Dip

I’m always looking for a new recipe to bring to parties and events; this may be my new favorite recipe! Caramelizing the onions brings onion dip to a completely different level! There is much more of a richness of onion flavor. I definitely recommend making it a day before you plan to serve it. This give is enough time for all the flavors to really develop. It goes perfectly with chips or veggies! It would be great over a baked potato too!

3 Tbsp olive oil
1 lb onion, diced
1 tsp kosher salt, divided
1 1/2 cups sour cream
3/4 cup mayonnaise
1/4 tsp garlic powder
1/4 tsp white pepper

In a large skillet, add the olive oil, onion and 1/2 teaspoon of salt. Saute on medium until the onions are caramelized. Once caramelized, remove from the heat and allow to cool for 15 minutes.

In a bowl, combine the sour cream, mayo, garlic powder, white pepper, remaining 1/ 2 teaspoon of salt and onions. Stir to combine. Cover and refrigerate for at least an hour, preferably overnight. Serve with chips and veggies.
