Buffalo Style Cashews

Do you all things buffalo? If so, these cashews are amazing! I’ve had them on my list to make and it took me months to find raw cashews. Craziness! My Costco stopped carrying them and then every time I went grocery shopping, the bulk bins for them was empty.

What I really like about this recipe is that you make your own buffalo sauce. I was a little heavy handed with the spices, so these pack a punch, but they’re so delicious. You could easily use another raw nut to make them, but cashews are the way to go for snacking!


2 cups raw cashews, soaked for at least 1 hour and drained
1/4 cup apple cider vinegar
1/3 cup olive oil
2 Tbsp water
2 Tbsp tomato paste
1/2 tsp cayenne pepper
1/4 tsp paprika
1/4 tsp red pepper flakes
1/2 tsp garlic powder
1/4 tsp ground turmeric
1/4 tsp sea salt

Line a baking sheet with parchment paper and set aside. Preheat your oven to 325 degrees. In a medium bowl, add the vinegar, oil, water, tomato paste and spices. Mix to combine. Add in the soaked cashews and stir to coat.

Pour the cashews onto the baking sheet. Bake for 30 minutes or completely roasted. Flip the cashews every 10 minutes. Serve immediately or allow to completely cool. Store in an airtight container for up a week.
