Marinated Mushrooms

I bought a large container of mushrooms to make a recipe and didn’t get around to making it last week. I wanted to figure out a way to use them up before they went bad. I searched for some recipes and thought it would be great idea to use them to make a jar of marinated mushrooms. Plus, they’ll be great addition to our holiday appetizer platter.

They were simple to make and luckily, I had everything I needed in my pantry. After 24-hours chilling in the refrigerator, they were ready to sampling. They’re so good and I know I’ll be making this recipe over and over again to always have a jar in our refrigerator.

16 oz mushrooms, thickly sliced (or quartered depending on the size)

1/4 cup olive oil

1/3 cup apple cider vinegar

2 cloves garlic, minced

1 Tbsp honey

1/4 tsp dried thyme

1 tsp salt

1/4 tsp red pepper flakes

2 tsp dried parsley or 2 Tbsp fresh, chopped parsley

In a large greased skillet, saute the mushrooms for 8 to 10 minutes over medium heat or until cooked. while the mushrooms are cooking, combine all the remaining ingredients in a large bowl. Mix well. Add in the sauteed mushrooms and mix to coat everything.

Transfer to a glass jar and cover. Refrigerate for at least 24 hour to allow the flavors to marinate and then enjoy.
