Mini Peach Crisp

I’m savoring the last bits of summer with fresh peaches from the local orchard. Their peaches have been amazing this year – super sweet and juicy. I picked up one last quart before it all that’s available are apples. These crisps are delicious with a gooey filling and the perfect topping….plus they’re individual sized. No feeling guilty for eating an entire one!

They are simple and easy to make. First you make the filling in a bowl, add it to the ramekins and then use the same bowl to make the topping. Perfect!

Peach Pie Scones

I love making scones and was excited to try this version. Peaches have been so delicious this summer. They’re super sweet; we’ve been eating them nonstop.

These scones were just as good! The scones are not super sweet, so the glaze definitely adds a perfect amount. You’ll get sweet chunks of peaches through the scone. My scones didn’t fluff up as much as I expected. I’m guessing I need to get a new container of baking powder and try them again.

Peach Panzanella Salad

My family has been on a bit of a salad strike – especially my son. He went from loving salad to HATING it. I thought I’d give a panzanella salad a try. No luck with him, but the rest of us loved this salad! It was so refreshing and bright. It’s simple to make and delicious! I loved the combination of sweet peaches with the saltiness of prosciutto and the creaminess of the fresh mozzarella. The vinaigrette is really good too – I’ll definitely make it again.

My husband is not a fan of fruit in salad, but I think I have may have converted him with this one! I can’t wait to make it again before local peaches are no longer available.

Peach Blueberry Basil Sangria

Since joining a wine club, I’ve grown my stockpile of wine and have been experimenting with making different varieties of sangria. This combination was delicious, refreshing and takes advantages of the fruit that’s available right now. My mom who is not a big drinker sampled it and said it was really good – it wasn’t too sweet and the little hint of basil was unexpected.

Do you prefer red or white sangria? I’m looking to experiment more and would love to make varieties of sangria my readers would like to try!

Sweet Corn Oatmeal with Peaches

We’re coming off an amazing season of fresh corn and peaches and this recipe for oatmeal features both of them! This recipe is great for breakfast or dinner. Creamy oatmeal with bites of fresh corn then topped with sweet peaches and creamy yogurt….it’s the perfect bite! This recipe makes four one-cup servings, but could easily be halved for smaller portions.

Fresh Peach Cobbler

Peaches are in season and they have been so good this summer! I’ve been buying them weekly and incorporating them into everything. My husband has been asking me to make peach cobbler and after a failed attempt at a vegan version (I’m not sure what went wrong), I decided to go ahead and make a traditional recipe. I’m so glad I did. It was delicious and the perfect way to highlight peaches.

Grilled Peach and Cinnamon Crumble Ice Cream

We’re in a crazy heat wave and it’s the perfect time to share a new recipe for ice cream! I was looking for something different to make when I stumbled across this recipe. Grilled peaches and cinnamon crumble….yes, please! I know last month’s theme was Peaches and Cream, but this recipe was too good not to make. The grilled peaches really enhance the peach flavor and then the cinnamon crumble adds a great texture to the decadent and creamy ice cream. I asked my husband to describe it since I only had spoonful and he just mumbled “mmmmmm” at me. I guess it’s a winner of a recipe!

Peaches and Cream Fruit Gummies

Happy first day of summer! It’s finally feeling like summer here in PA and we’ve been able to go swimming already – which my kids absolutely love! Do you have any vacation plans this year? We’ll probably do a couple of day trips to the shore and my kids are begging to go to Hershey Park.

Today is also June’s Fantastical Food Fight! Each month, there will be a theme or ingredient to be featured and anyone participating the challenge will share their recipes with everyone else. Check out the blog hop below the recipe!

This month’s theme was peaches and cream. I didn’t want to make something that I would normally make and wanted to try something different. This was the first time I ever used gelatin. Add on the fact that I don’t care for foods with jello like texture – but I was surprised these gummies are good! They’re different from what my kids are used, but the peach flavor was perfect – not too strong and enough to taste it. I had a little trouble getting the gummies to release from the pan to cut into small squares, so I used a mini cookie cutter to make star shapes! These gummies don’t have a long shelf like, so I sent them to camp with my daughter for her friends to enjoy! Another thing I like about the recipe is that the flavors can be changed to whatever you like. I bet mango and strawberry would be delicious!

Upside Down Peach Cake

Peach season is winding down and I grabbed one last basket of peaches from the farm stand I visited all summer. This basket ripened all at the same time and I knew we wouldn’t be able to eat them before they went bad, so I decided to bake a cake. My coworker mentioned making an upside down peach cake and I thought it was a great idea. I mean, you can’t go wrong with glazed peaches and a moist cake. Top with a dollop of whipped cream or a scoop of vanilla ice cream. Yummy!
